My mom started to bake these raspberry bars after coming home from spending time with my grandmother in Slovakia last summer. My grandmother has bushes of raspberries growing on her property, so she often makes these when there is an abundance of raspberries. Since then, my mom bakes these bars on the regular because they are so good and the whole family just can’t get enough.
These bars taste sweet and tart – that combined with a thin, buttery crust make these the ultimate bars. These bars are perfect for just about any occasion and time of day. To pair with coffee? Of course. What about a dinner party dessert? Sure! Even breakfast? Um, yeah – there is fruit in them, after all…I hope you like this recipe as much as I do.

Raspberry Bars
Makes 1 8×10 sheet
2 cups all purpose flour
3 sticks of cold unsalted butter
1 egg
1 teaspoon baking powder
Pinch of salt
2 12 ounce bags of frozen raspberries, thawed
1 cup powdered sugar
½ cup raspberry jam or preserves
Streusel Topping
½ cup unsalted butter, semi-softened in microwave for 30 seconds when pulled from fridge
1 cup all-purpose flour
½ cup powdered sugar
Preheat oven to 350 degrees fahrenheit.
For the dough: in a food processor, combine flour, butter, egg, baking powder. Once a dough forms, put it onto a floured surface and roll out the dough to be as large are your pan (8×10). Add the dough into the pan and use your fingers to press in dough where needed, so it covers the entire bottom of the pan – the edges do not need to be super precise!  Spread the raspberry jam in an even layer across the top of the raw dough.
For raspberry mixture: thaw frozen raspberries in refrigerator for a few hours or overnight. Once thawed, strain the liquid. Add the powdered sugar and mix to combine. Add this raspberry mixture to the top of the jam-topped dough.
For streusel topping: Semi-soften the ½ cup unsalted butter in the microwave for 30 seconds. Add 1 cup flour and ½ cup powdered sugar. Mix with hands until mixture resembles rice-like crumbles. Crumble over the top of the cake before baking.
Bake: Bake the assembled cake at 350 degrees fahrenheit for 40-50 minutes or until the edges start to brown. Let cool for 20-30 minutes. Once cool, cut into large or small squares or triangles for bars or use cookie cutters to cut into fun shapes (I used a heart shape for Valentine’s Day).
