The Superbowl: the all-American pastime that is the nation’s most coveted sport. Touchdowns, field goals, fumbles, punts…oh the thrill! Who am I kidding? The only adrenaline rush I get from the Superbowl is from the ample amount of parties and bar-style food that appears at them (I am trying to love football, I really am!) Spicy, creamy, luxurious jalapeño-scallion dip will pair perfectly with a crisp crostini for this main event, fans and faux fans alike!

Jalapeño-Scallion Dip

2 jalapeños, diced small
4 small scallions, chopped
3 Tbsp. chopped pickled jalapeños
1 Tbsp. pickled jalapeño juice
1 clove garlic, finely minced
juice of 1/2 lemon
16 oz. cream cheese, room temperature
3/4 extra-sharp cheddar cheese, shredded
1/4 cup grated parmesan
1/2 cup mayonnaise
1 tsp. paprika
1 tsp. salt
1/2 tsp. pepper

Preheat oven to 400F. Combine all ingredients into a mixer fitted with a whisk attachment or use a handheld mixer. Mix until combined well and pour into desired baking/serving dish. The mix was enough for me to fill the dish pictured, plus one more just that size.

Topping:

1 cup panko bread crumbs
1/2 sticks unsalted butter

Melt the butter and then mix with the panko bread crumbs, spread evenly over the dip. Bake at 400F for 20 minutes and serve warm with crostini.
