Kumquat Pomegranate Fizz
Step 1: Make the Kumquat syrup
1 1/2 cups sliced kumquats
1 1/4 c sugar
1/3 orange liquor, such as Gran Marnier or Triple Sec
Combine all in a stockpot and simmer until the sugar is dissolved. Let cool.
Step 2: Make the Garnish, Candied Kumquats
1 cup sugar
2 cups kumquats, sliced in half
2 Tablespoons water
Combine in a saucepan and let the kumquats caramelize. Let cool.
Step 3: Assemble Garnish
Once cooled, stack candied kumquats, about five or six, on a toothpick.
Step 4: Assemble Cocktail
Pour the cooled kumquat syrup into a pitcher. Add 1/2 cup pomegranate juice. Top off with one bottle of champagne. Pour into glasses and garnish with candied-kumquat stack.
