Petit Luxe’s first cooking video! I love these versatile hand pies, which can be made into any other shapes for a different theme, just use a different cookie cutter. Or, it can be made with any other fruit of your choice.
Blackberry-Apple Heart Hand Pies
Filling
1 lb. Sweet Lady Apples, small diced
1 Pint Blackberries, roughly chopped
1/4 c Flour
1/4 cup Brown Sugar
1/4 cup Crystalized Ginger, small diced
1 Tablespoon Vanilla Extract
2 Tablespoons Orange Juice
1 Tablespoon Lemon Zest
Mix all ingredients together. Put aside.
Pie Dough
1 Stick Unsalted Butter, cold & small diced
1 cup Flour
1 Tablespoon Sugar
1 Teaspoon Salt
2 Tablespoons Ice Water
In a food processor, combine the flour, sugar, salt and butter. Pulse until the butter becomes the size of peas. Slowly add the ice water. Pulse until a ball of dough forms. Wrap in plastic wrap and chill for 2 hours or until overnight. Roll the dough out to 1/4 inch thick on a floured surface. With a heart shaped cookie cutter, cut out the pie dough into the heart shapes and place onto a cookie sheet lined with parchment paper.
Assembly
Egg Wash
Coarse Sanding Sugar
Spoon 1 Tbsp. of the filling into half of the cut out pie dough hearts. Put the other half on top and seal the edges with the back of a fork. Brush the tops of the hand pies with egg wash and sprinkle with the sanding sugar. Bake for 20 minutes at 375 F.
