What I love about summer is that you can easily dress up a weeknight dinner by grilling. Grilled fish tacos are light, pop with flavor and color and are probably the one of the easiest and fun dishes you can whip up on a warm summer night.
Ancho Chile-Lime Salmon Tacos
Ancho Chile powder
Salt & Pepper
1. Marinate in seasonings and lime juice for at least 15 minutes, up to an hour. Grill.
Whole Wheat Flour Tortillas
Black Beans, rinsed and drained
Shaved red onion
Shredded Mexican Cheese
Smashed Avocado with lemon
1. Melt cheese on tortilla and add salmon. Then, just add desired toppings!
1 1/2 ounces Silver Tequila
3/4 ounce Triple Sec
1 1/2 Tablespoons Fresh Lime Juice
1. Shake, strain, and serve!
